Blueberry Pickles??? Yup, that's right... I haven't personally tried this one yet but it sounds absolutely delicious. And I think our Ochlockonee or Liberty Blueberries would be a perfect fit. They have just the right amount of tang and sweetness.
Here is the recipe: submitted to us by Marge Welch.
Blueberry Pickles
Ingredients:
2 quarts Blueberries
2 cups sugar (white, brown, or mixed)
1 1/2 cup vinegar (red wine, apple cider, rice wine, or mixed)
3 Tbsp cinnamon
1 tsp allspice
1/2 tsp ground cloves
1/2 tsp ground nutmeg
Directions:
1. Bring to a boil: spices, vinegar, sugar, then simmer 5 minutes.
2. Add blueberries, bring to a boil again, simmer gently 30 minutes.
3. Jar ingredients. Keep in fridge or process and keep in pantry.
"Saucy" consistency, great over cheese, with poultry or fish, or with cream cheese and bagels.
